Key Lime Cheesecake
A sweet, tangy cheesecake similar to key lime pie, typically served with whipped cream and lime slices.

Ingredients
• Graham cracker crumbs - 1 1/2 Cups
• Melted butter - 6 Tbls
• Cream cheese - 24 oz softened
• White sugar - 1 Cup
• Cornstarch - 1 Tbls
• Eggs - 3
• Lime zest
• Key lime juice - 2/3 Cups
Directions
○ Prepare crust — Combine crumbs and butter, press into a springform pan, and chill.
○ Mix filling — Beat cream cheese, sugar, zest, and cornstarch until smooth. Add eggs one at a time, then key lime juice.
○ Bake — Bake at low temperature until set. A water pan helps reduce cracking.
○ Finish — Let rest in the oven briefly, then refrigerate overnight.
Tips & Notes
• Let the cream cheese and eggs come to room tempature, before using.
• Use 4 Limes for juice and the zest from all 4 limes.
• Using a 8" pan bake at 275 degrees for 1hr and 45 min it will turned out perfect.
• You can use Lemon wafers instead of graham crackers.
