Chicke & Potatoes
A tender layered chicken & potato bake topped with a nice sauce and a golden mozzarella crust.

Ingredients
Chicken Layer
• 600 g chicken fillet (two breasts), cut into large cubes
• 2–3 tbsp olive oil
• 1 tbsp butter
• Pinch of salt
• ½ tsp dried garlic
• ½ tsp sweet paprika
• Pinch of freshly ground black pepper
Potato & Onion Layer
• 1 large onion, sliced into half‑rings
• 2 garlic cloves, finely chopped
• 400 g potatoes (two poatoes), sliced into thin, even rings
• Pinch of salt
• Freshly ground black pepper
Cream Topping
• 80 g sour cream (room temperature)
• 2 eggs
• 150 g mozzarella, grated (freeze 10 minutes for easier grating)
Instructions
1. Prepare & Cook the Chicken
○ Cut chicken into large, even cubes.
○ Heat a pan over medium heat and add olive oil + butter.
○ Arrange chicken in a single layer so it fries instead of steaming.
○ Season with salt, dried garlic, sweet paprika, and black pepper.
○ Fry until lightly golden and fully cooked.
○ Remove chicken from the pan and set aside.
2. Cook the Onions & Garlic
○ Slice the onion into half‑rings.
○ Add onions to the same pan without washing it.
○ Stir and cook until softened.
○ Add chopped garlic and cook briefly, stirring constantly.
3. Prepare & Cook the Potatoes
○ Slice potatoes into thin, even rings.
○ Rinse potatoes rings in cold water to remove excess starch.
○ Add potatoes to the pan with onions and garlic.
○ Stir thoroughly so every slice is coated in the flavored oil.
○ Season with salt and black pepper.
○ Cook until potatoes are tender.
○ Remove from heat.
4. Assemble the Bake
○ Spread the potato–onion mixture evenly into a baking dish or cast iron skillet.
○ Add the chicken as the second layer and smooth it out.
5. Make the Cream Topping
○ Whisk together sour cream and eggs until smooth.
○ Pour evenly over the chicken layer.
○ Sprinkle grated mozzarella on top without pressing it down.
6. Bake
Bake at 375°F for 25–35 minutes, or until the top is golden and bubbling.
Notes
• For a one dish option do everything in a cast iron skillet.
