Squaw Corn Casserole

A childhood comfort food recipe. This was my favorite casserole as a child growing up and now it brings up fond memories of my childhood.

Serves: 4

Time:

• Prep: ~ 20 minutes

• Cooking: 30 minutes


Ingredients

• 1 lb ground beef

• 1/2 diced onion

• 2 eggs

• 1 can creamed corn

• 1/2 cup milk

• 2 cup crushed saltine crackers (divided)

• 1 tsp mustard

• 1 tsp salt


Directions

○ Brown the ground beef with diced onion.

○ Preheat oven to 350°F.

○ Beat eggs slightly, then stir in milk and 1 cup crashed crackers.

○ Add the egg mixture to the browned meat along with salt, corn, and mustard. Mix well.

○ Transfer mixture into a casserole dish.

○ Cover the top with 1 cup crushed crackers.

○ Add pats of butter to the top.

○ Bake at 350°F for 30 minutes.
