Stuffed Pepper Casserole

I love stuffered pepper and I love casseroles. This is what you get when you put them both together.

Servings: 6

Time:

• Prep: ~30 Minutes

• Baking: ~20 Minutes


Ingredients

• 1 lb ground beef or ground turkey

• 1 small onion, diced

• 1 tsp garlic, minced

• 1 tsp salt

• 1/2 tsp pepper

• 1 can tomato soup

• 2 cups cooked rice

• 1 cup diced tomatoes or can diced tomatoes

• 3 large bell peppers, chopped

• 1 cup shredded cheddar cheese


Directions

Brown the meat
In a large skillet, cook the ground beef (or turkey), onion, and garlic until the meat is fully browned. Drain if needed.

Combine ingredients
Add salt, pepper, tomato soup, cooked rice, diced tomatoes, and diced green peppers. Mix well and let the mixture cook for 10–15 minutes.

Bake
Transfer the mixture to a casserole dish. Top with shredded cheddar cheese (and extra peppers if desired).
Bake at 350°F for 10 minutes, or until the cheese is melted.
