Tacos al Pastor
Mexican Street Tacos grilled on a spit.
Ingredients
• Pork loin or shoulder into about 1/4 in slices
• Onion
• Pineapple (fresh or can)
• Marinade (see below)
• Avocadoes (for garnish)
• Cilantro (for garnish)
Marinade
• 3 tablespoons achiote paste
• 2 tablespoons guajillo chili powder
• 1 tablespoon garlic powder
• 1 tablespoon dried oregano
• 1 tablespoon cumin
• 1 tablespoon salt
• 1 tablespoon pepper
• 1 teaspoon cinnamon
• 3/4 cup apple cider vinegar
• 1/8 cup lime juice
• 1 cup pineapple juice
• 1 cup orange juice
Directions
○ Marinade the pork slices for 2 hours to 3 days.
○ Place pork on spit with pineapple slice on the bottom and top.
○ Cook/Grill for at ~350 degrees until ~160 degrees when probed. (~ 1 1/2 hours).
○ Grill onions and pineapple separately.
○ Let pork rest 5-10 minutes.
○ Slice meat off Spit.
○ Serve with the grilled onion, pineapples.
○ Garnish the avocadoes and cilantro.
