Slow Cooker Broccoli & Rice

A cheesy, comforting side dish perfect for holidays, cookouts and potlucks.


Ingredients

• 1½ cups Minute Rice

• ¾ lb Velveeta cheese, cut into ½‑inch cubes

• 14.4 oz frozen chopped broccoli

• 1 tsp onion flakes or ¼ cup minced onion

• 1 can (8 oz) water chestnuts, drained and diced

• 1 can (10.5 oz) cream of mushroom soup

• 1 can (10.5 oz) unsalted chicken broth or beef broth

• 1 cup milk

• ¼ cup white wine (optional)

• ½ tsp ground black pepper

Optional topping:

• 1 cup crushed Ritz crackers

• ¼ cup melted butter


Directions

○ Turn slow cooker to your desired temperature (HIGH or LOW).

○ Spray the slow cooker with nonstick cooking spray.

○ Add all ingredients to the slow cooker and stir thoroughly.

○ Cook on HIGH for 2 hours or LOW for 4 hours.

Optional topping:

○ If your slow cooker has a removable crock, mix the crushed crackers and melted butter.

○ Sprinkle over the cooked casserole.

○ Place under the oven broiler to brown — watch closely to avoid burning.

○ Serve and enjoy!
