Pickles
Spicy Homemade Pickles. Who does not love a pickle.
Makes: About 1 jar
Time:
10 minutes prep + 24 hours pickling
Ingredients
• Cucumbers quatered
• 1/4 Sweet Onion sliced
• 2 Garlic Cloves finely diced
• 1/8 tps Pickling Spices
• 1/2 tps Black Peppercorns
• 1/8 tps Red Pepper Flakes
• 3/4 C Vinegar (white or rice)
• 3/4 C Water
• 1/4 C Brown Sugar
• 1/8 tps Salt
• Fresh dill
Directions
○ Using a mortar and pestle, grind peppercorns, pickling spice, and pepper flakes together.
○ Pack sliced cucumbers and sliced onion into a clean jar.
○ Add some garlic, dill, and mortared spices to the jar.
○ In a small pan add vinegar, water, sugar, and salt.
○ Add the rest of the garlic and mortated spices to the vinegar and water.
○ Heat until sugar and salt is dissolved.
○ Pour the hot brine over the cucumbers, ensuring everything is submerged.
○ Let cool, then refrigerate for at least 24 hours.
○ Enjoy within 2–3 weeks.
Notes
• Works best with Enlgish, Persian, or pickling cucumbers.
• Adjust red pepper flakes for more or less heat.
• Add mustard seeds or peppercorns for extra flavor.
• You can use white sugar or honey as well.
