Potatoe Skins
A super treat for that football game, or a great side for a cookout.
Time:
• Cooking: ~35 Minutes
Ingredients
• Russet potatoes
• Center-cut bacon, or bacon bits.
• Olive oil
• Salt & pepper
• Shredded cheddar cheese
• Sour cream
• Green onions, thinly sliced
Directions
○ Preheat oven to 400°F
○ Cook bacon until evenly browned. Drain on paper towels and crumble.
Note: You can use bacon bits instead of bacon slices.
○ Microwave Potatoes until soft
○ Cut potatoes in half lengthwise. Scoop out the flesh, leaving about 1/4 inch on the skin.
○ Brush olive oil all over the potato skins, inside and out, then sprinkle with salt.
Note: Reserve the scooped potato flesh for another use.
○ Bake skins for 10 minutes on a pan. Flip and bake 10 minutes more.
○ Remove from oven and arrange potato skins flesh-side up in the pan.
○ Season with black pepper.
○ Top with cheddar cheese and crumbled bacon.
○ Continue to cook until cheese is well melted.
○ Serve with a dollop of sour cream on each skin and sprinkle with green onions.
